Description

Beyond drinking the tea, and identifying what characteristics and tones can be described, how does the tea compare to others of its kind? Taiwan Oolong Cupping and Grading sets the stage for the Sommelier, or connoisseur, to determine the type and quality of tea that is being served. It is meant to standardize grading of teas, with continual development of the individual palate, and diligence of creating a database of notes to help recall tastes, and determine quality of each liquor brew.

Learning Objectives

• Define and understand the different categories of Oolongs
• Distinguishing grading scales for each categories
• Learn how professional and competition cupping and grading of each category of Oolong
• Learn basic methodology and setup of cupping, and grading
• Learn to use the Taiwan Tea Institute’s cupping/grading log
• Learn the basics of professional cupping for personal and/or customer service
• Develop a discipline of creating a database of cupping logs
