Cold brewed tea has become all the rage! Want to learn why? In this session, we will describe the flavor chemistry of different teas, including green, oolong, and black, and show why cold brewing gives you such a different flavor profile from hot brewing. Then together we will explore our taste and smell systems, and discuss why some of your customers may enjoy certain aspects of hot or cold brewed teas, such as bitterness and astringency, or even sweetness, while others may not. Finally we will discuss what these differences mean for the popularity of cold versus hot brewed tea, and for how you might choose to describe these teas in your labels and menus.

Learning Objectives

At this session you will:

• Learn about the chemical differences between hot brewed and cold brewed teas;
• Explore how these differences affect the organoleptic qualities of teas;
• Discover how genes and experience affect the pleasantness of these organoleptic qualities, and how to promote these qualities in your business.
