SUPER WORKSHOP: "The Way of Tea"
Taught by the Ura Senke Foundation, sponsored by AIYA America

	This 2 hour workshop will be divided into two parts. The first half will begin with a discussion surrounding the philosophy and the principles of the 'Way of Tea', as well as a walk-through of the basic procedures involved in a tea ceremony. It will then be followed by practical instructions as to how to prepare tea, handle equipment, and formally serve the tea. The second half will consist of how to objectively discern the differences in quality of matcha tea by using science based and sensory tests. Select audience members will join the Ura Senke tea masters to comment on ceremonial matcha tea samples. The comments will be matched up with lab analytics to show how the results can identify true matcha This exercise will illustrate how science can help quantify what the senses detect. Attendees will have the opportunity to taste and experience matcha tea during this session.
